Description

Umami is the sixth taste, discovered by the Japanese in the early 1900s. It is a savory flavor that comes from glutamate.

The choice of the restaurant’s name is therefore not accidental. For Leandro, Umami means a pursuit of flavor, but always with deep respect for the raw ingredients.

Born and raised on Elba Island, Umami represents a lifelong dream for Leandro—a way to bring together his island roots, the experience gained over the years, his passion, and his creativity.

He began working in the kitchen at a very young age, and those early experiences were crucial in connecting him to the roots of Elban culinary tradition. That is exactly where his cuisine begins. Then, curiosity, passion, and dedication allowed him to refine his techniques, which, combined with creativity, imagination, and instinct, bring his dishes to life.
